Fregula is a specialty of the traditional Sardinian cuisine, similar to the African cous-cous.
Traditionally handmade in the characteristic clay pot, mixing and working coarse semolina with water with the fingertips, thus obtaining small grains that are then left to dry outside and are then roasted.
The typical preparations for Fregula are in meat broth with seafood and shellfish, especially clams, or in a tomato sauce.
